I would like to delete stored info on this ipod, including the password. How do I delete password and info?

If you do have access to the iPod touch, you can also do so by going into Settings > General > Reset as outlined here: http://support.apple.com/kb/HT2110

Simply restore/reset your iPod in iTunes.
